Beef Stew

Any kind of beef will work here.

Put beef in a roaster. Mix one envelope of Lipton Secret and 1/2 cup boiling water and pour over meat.  Bake in oven until meat is done.  You might need to add a little more water as it bakes.

Get you veggies ready.  Clean 3 large potatoes and cut into chunks.  Boil until tender.  When meat is done, cut into chunks and put meat, potatoes and veggies all together and cook until veggies are cooked.  Do not use salt when using Lipton Secret.  Parsley, pepper and sauce if you want. 

Beef Soup

Shank is best for this.

Before cooking, clean with water your beef.  Put on to boil and skim off top until clean.  Then have veggies ready.  You can use frozen veggies also.  Cook until meat is tender.  (It takes longer than chicken.)  Cut meat into small pieces.  Use some sauce also and salt etc.  Same as chicken soup

Chicken Soup

1. Get all veggies ready.  Chop carrot and celery small.  Chop onions.

2. Skin chicken in cold water and take out most of the fat.  Put some salt in the water.  Wash chicken really well through bones until all blood and black veins come out. 

3. Put chicken in a big pan.  Fill with cold water and let it come to a boil for 5 mins.  Take off heat, dump water and chicken in sink and wash again.  Clean pan and put chicken in with water and cook.  Skim the top when it starts to boil.  When it's clean on top put in all veggies and let it cook slowly.  Then put in salt, parsley flakes, garlic powder, little pepper and some tomato sauce or puree (about 1/2 cup) or more.  Cook for a coupl of hours.  Take meat out and cut into very small pieces.  Discard bones.  Cook pasta (any kind of noodles) separately and put in soup.  Enjoy!

Sausage Soup

Serves 8

1 lb hot sausage*
1/2 lb mild sausage
1/4 cup margarine
1/4 cup flour
1 large garlic clove
1 large onion chopped
2 green peppers chopped
6 tomatoes chopped or 1 lb can tomatoes
2 cup  chicken broth (or boulion)
1/2 to 1 cup chopped celery

If you choose not to use hot sausage you will need to add 2 teaspoons salt and 1/4 teaspoon pepper.

Fry sausage and drain. 
Melt butter and add flour.  Cook until brown.
Add garlic, onions, celery, and green pepper.  Cook until tender.
Add tomatoes, broth (and seasonings).
Simmer covered about 30 minutes.

Add another cup of water and (and cube of bulion) if more liquid is desired.

Tomato Tortellini Soup

Serves 6

1 large can light chicken broth*
1 28 ounce can diced tomatoes and juice*

1 large onion diced
2 large cloves garlic minced
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon red pepper
2 bay leaves
1 package frozen mini meatballs
boil package cheese tortellini in broth

*note increase broth or decrease tomato as desired
