Sausage Soup
Serves 8
1 lb hot sausage*
1/2 lb mild sausage
1/4 cup margarine
1/4 cup flour
1 large garlic clove
1 large onion chopped
2 green peppers chopped
6 tomatoes chopped or 1 lb can tomatoes
2 cup chicken broth (or boulion)
1/2 to 1 cup chopped celery
If you choose not to use hot sausage you will need to add 2 teaspoons salt and 1/4 teaspoon pepper.
Fry sausage and drain.
Melt butter and add flour. Cook until brown.
Add garlic, onions, celery, and green pepper. Cook until tender.
Add tomatoes, broth (and seasonings).
Simmer covered about 30 minutes.
Add another cup of water and (and cube of bulion) if more liquid is desired.
