Whole Wheat Oatmeal Chocolate Chip Cookies

Yield 3-4 dozen1 teaspoon baking soda


1/2 cup margarine
1/2 cup shortening
1 cup packed brown sugar
1 cup granulated sugar
1 cup sifted flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1 cup flaked coconut
3 cups rolled oats
1/2 cup chopped nuts
2 teaspoon cinnamon
6 ounces chocolate chips

1) Cream shortening, margarine, and sugars until fluffy then beat in eggs.
2) Sift flour.  Add baking soda, baking powder, whole wheat flour, and cinnamon.  Mix together thoroughly. 
3)Mix in coconut, nuts, rolled oats and chocolate chips until well blended.

4)Roll 1 1/4 inch balls.  Space 2 inches apart on lightly greased baking sheets.  Flatten to 1/4 inch evening ragged edges.  Bake at 375 degrees (350 in a convection oven) 8 to 10 minutes until lightly browned.  Remove to wire racks while warm.

Wheat and Raisin Chip Cookies

1 1/2 cup margarine or shortening
1 1/2 cup firmly packed brown sugar
1 1/2 cup sugar
2 teaspoons vanilla
4 eggs
2 1/2 cup unsifted flour
2 1/2 cup unsifted whole wheat flour
1 teaspoon salt
2 teaspoon baking soda
2 tablespoons hot water
1 cup chopped nuts

1 cup raisins
1-12 ounce package chocolate chips

Preheat oven to 350 degrees.

Beat margarine in large bowl until soft.  Gradually add sugars beating until fluffy.  Add vanilla.  Add eggs one at a time beating well.  Blend both kinds of flourand salt on a sheet of waxed paper.  Gradually add flower mixture to sugar mixture beating by hand until well mixed.  Dissolve soda in hot waterand add to sugar flour mixture.  Stir in nuts, raisins and chocolate chips. 

Using one generous Tablespoon dough for each cookie, place on greased cookie sheet.  Flatten dough to a 2 1/2 inch circle.  Bake for 10-12 minutes.  Allow to cool. 

Hot Fudge Sauce

Complements of Rachel Amato:

1 cup sugar
1/3 cup cocoa powder
2 tablespoons flour

Mix these in sauce pan.  Add 1 cup boiling water a little at a time (keeps it from forming lumps). 

Cook until thick then add 2 tablespoons butter and 1 teaspoon vanilla. 

Serve over ice cream. 

Fudge Brownies

13x9 pan

2 cups sugar
6 tablespoons cocoa
melt 1 stick butter +3 Tablespoons + 1 Tablespoon oil

mix above ingredients and add 2 eggs and 5 tablespoons of water. 

Then add:
1 1/2 cup flour
1 teaspoon baking powder

2 teaspoons vanilla

Pour into greased (crisco) and floured pan.  Bake at 350 degrees for 25 minutes.

Icing:
5 tablespoons margarine (oleo)
5 tablespoons cocoa
2 tablespoons milk

Melt and cook.  Mix in sifted powdered sugar. 

Fluffy White Frosting - Two recipes

Compliments of Judy Spitale:

1 cup sugar
1/2 cup soft margarine
1/2 cup crisco
5 heaping tablespoons flour
1 teaspoon vanilla
1/2 cup milk

Combine slowly and then beat at highest speed for approx. 5 mins. 

Makes generous amount

Fluffy White Frosting

1 cup Crisco or 1/2 cup crisco and 1 stick butter
1 cup granulated sugar
1 teaspoon vanilla
6 tablespoons flour
3/4 cup very warm milk

Beat crisco.  Beat in sugar well.  Add flour one tablespoon at a time.  Slowly add very warm milk and beaton high until dissolved- about 10 minutes.  Add vanilla.  Stores well at room temp.  Do not refrigerate and try to rebeat. 

Old Fashioned Cocoa Cake

2/3 cup margarine
1 2/3 cup sugar
3 eggs
1/2 teaspoon vanilla
2 cups flour
2/3 cup cocoa
1 1/4 teaspoon baking soda
1 teaspoon salt
1 1/3 cup water
1/2 cup crushed peppermint candy (optional)

Beat first 4 ingrediants with a mixer at high speed for 3 minutes.  Combine dry ingredients.  Add alternatively with water to creamed mixture.  Blend just until combined.  Add candy.  Pour into greased and cocoa dusted 9 inch cake pans.  Bake at 350 degrees for 30-35 minutes.

Chocolate Fudge Frosting:
Melt 1/2 cup margarine in 2 quart heavy sauce pan.  Add 5 tablespoons cocoa and 5 tablespoons of milk.  Stir well.  Bring mixture to a boil.  Remove from heat.  Add 1 pound package confectioners sugar and 1 teaspoon vanilla.  Beat until smooth.  Makes plenty for 9 inch cake. 

Hot Fudge Sundae Cake

In an ungreased 9 inch square pan mix together:
1 cup flour
3/4 cup sugar
2 tablespoons cocoa
2 teaspoons baking powder
1/4 teaspoon salt

 Stir in the following until smooth:
1/2 cup milk
2 tablespoons oil
1 tablespoon vanilla

Spread batter evenly in pan.  Sprinkle with 1 cup brown sugar and 1/4 cup cocoa.  Pour 1 1/2 cup hot tap water over batter.  Do not mix water into batter.  Bake in preheated 350 degree oven for 40 minutes.  Remove from oven and let stand for 15 minutes.  Spoon into dessert plates.  Top with vanilla ice cream and spoon the hot fudge sauce on top. 

English Triffle

(serves 20)

1 large cool whip
1 bakery jelly roll
1 bakery pound cake
2 packages sweetened frozen strawberries (10 oz.)
2 packages sweetened frozen raspberries (birdseye)
1 pint whipping cream
2 packages (small) instant vanilla pudding
2 cups milk

Slice jelly roll into 8 slices and arrange on sides and bottom of punch bowl, cutting half the slices to rest on top of first layer.  Drain strawberries, reserving juice*.  Spoon over jelly roll on bottom.  Whip creamand fold gently into prepared pudding  using the 2 cups milk only.  Pour half cream mixtureover strawberries.  Slice pound cake and arrange over cream breaking pieces to fit if needed.  Arrange drained raspberries over cake.  Frost top completely with generous amount of cool whip.  Refrigerate at least 12 hours. 
* use reserved juice to drizzle over all cake surfaces to moisten. 

Coconut Crumb Cherry Pie

Compliments of Wanda Amato

1 Ready to bake pie shell
1 21 oz. can cherry pie filling
1/2 cup flour
1/4 cup sugar
1/4 cup (1/2 stick) margarine or butter
1 cup bakers coconut

 Bake pie shell at 450 degrees for 5 minutes.
Bring pie filling just to a boil in saucepan- pour into warm shell.

Meanwhile, combine flour and sugar.  Stir in butter, add coconut and stir with fork until mixture is crumbly.  Sprinkle over pie filling.

Bake at 375 degrees for 20-25 minutes or until browned.  Cool. 

Banana Cream Pie

3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups milk
3 egg yolks, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
1 patery shell (9 inches baked)
3 medium firm bananas
Whipped cream and additional sliced bananas

In a saucepan, combine sugar, flour, and salt.  Stir in milk and mix well.  Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.  Boil for 2 minutes.  Remove from heat.  Stir a small amount into egg yolks.  Return all to saucepan.  Cook for 2 minutes, stirring constantly.  Remove from the heat.  Add butter and vanilla.  Cool slightly.  Slice the bananas into pastry shell.  Pour filling over .  Cool.  Before serving garnish with whipped cream and bananas.  Refrigerate any leftovers.  (Even better the second day!)
