Whole Wheat Oatmeal Chocolate Chip Cookies

Yield 3-4 dozen1 teaspoon baking soda


1/2 cup margarine
1/2 cup shortening
1 cup packed brown sugar
1 cup granulated sugar
1 cup sifted flour
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
1 cup flaked coconut
3 cups rolled oats
1/2 cup chopped nuts
2 teaspoon cinnamon
6 ounces chocolate chips

1) Cream shortening, margarine, and sugars until fluffy then beat in eggs.
2) Sift flour.  Add baking soda, baking powder, whole wheat flour, and cinnamon.  Mix together thoroughly. 
3)Mix in coconut, nuts, rolled oats and chocolate chips until well blended.

4)Roll 1 1/4 inch balls.  Space 2 inches apart on lightly greased baking sheets.  Flatten to 1/4 inch evening ragged edges.  Bake at 375 degrees (350 in a convection oven) 8 to 10 minutes until lightly browned.  Remove to wire racks while warm.

Wheat and Raisin Chip Cookies

1 1/2 cup margarine or shortening
1 1/2 cup firmly packed brown sugar
1 1/2 cup sugar
2 teaspoons vanilla
4 eggs
2 1/2 cup unsifted flour
2 1/2 cup unsifted whole wheat flour
1 teaspoon salt
2 teaspoon baking soda
2 tablespoons hot water
1 cup chopped nuts

1 cup raisins
1-12 ounce package chocolate chips

Preheat oven to 350 degrees.

Beat margarine in large bowl until soft.  Gradually add sugars beating until fluffy.  Add vanilla.  Add eggs one at a time beating well.  Blend both kinds of flourand salt on a sheet of waxed paper.  Gradually add flower mixture to sugar mixture beating by hand until well mixed.  Dissolve soda in hot waterand add to sugar flour mixture.  Stir in nuts, raisins and chocolate chips. 

Using one generous Tablespoon dough for each cookie, place on greased cookie sheet.  Flatten dough to a 2 1/2 inch circle.  Bake for 10-12 minutes.  Allow to cool.
