Cornmeal Waffles
6 Servings
1 cup yellow cornmeal
1 cup all-purpose flour
2 teaspoons granulated sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cup milk
2 large eggs, lightly beaten
1/3 cup butter, melted
1. In a large bowl, combine corn meal, flour, sugar, baking powder and salt.
2. In a separate bowl with an electric mixer at medium speed, beat together milk, eggs, and butter. Add to dry ingredients and mix to blend.
3. Pour batter onto a hot greased waffle iron and bake until browned and crisp (if your iron has a light use it as a guide). Serve with butter and syrup or jam.
