Carrot Cake
Compliments of Mary Kilgore
1. Mix 1 1/2 cup oil and 2 cups sugar well.
2. Add 4 eggs one at a time beating each one well.
3. Add 2 cups of flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon cinnamon, and 1/4 teaspoon of salt.
4. Add 2 cups of grated carrots.
Bake in an ungreased 9X13 pan or loaf pan at 350 degrees for 50-60 minutes
Icing
8 ounce cream cheese
1 stick margarine
add 1 lb box/bag of powdered sugar, vanilla and 1 cup nuts. Add a little milk if needed.
