Served the morning of Maria Dillon's Wedding

Yield 1 dozen muffins

1 whole orange
1/2 cup orange juice
1/2 cup craisins
1 egg
1/2 cup margarine
1 1/2 cup sifted flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup sugar
1 scant teaspoon salt

Preheat oven to 400 degrees.

Cut orange into fourths.  Remove any seeds.  Blend with orange juice in the blender.  Add craisins, egg, margarine and blend briefly.  Mix dry ingredients in a bowl.  Pour be=lender ingredients over the dry in the bowl.  Mix until moist.  Pour into lined muffin tins.  Bake for 15 minutes.
